Godai

Offering a wide variety of lamb cuts, Godai specializes in Chingizukan lamb.

It is thicker than other cast iron griddles and has a very high thermal conductivity. This reduces the loss of juices and makes the meat fresher.

The main dishes here include the lamb loin and the lamb ribs. The lamb loin is characterized by its tender texture. The lamb ribs are full of savory flavor.

They only sell 30 servings per day, so we recommend visiting early.

You’ll need to call in your order before 3pm to get a chance to try it.

The added chili peppers in the soy sauce make it even more delicious.

The rice comes in two flavors. “Freshly cooked rice” is made from low-temperature aged organic rice. “Soy Sauce Egg Rice” is topped with an egg.

Jungyangjip uses lamb raised by free-range farmers in New Zealand.

They use charcoal with a good burning power rather than strongly scented charcoal to bring out the unique flavor of the lamb.

The menu includes “salchisal,” which has a chewy, savory flavor. It also features “raw loin,” which is moist and juicy. Additionally, there is “shoulder rack,” known for its unique texture from the shoulder of a lamb that moves a lot. The “French rack” is included and is said to be the best part of lamb.

The standard side dishes include pickled kimchi made with Dolsan and Honggat seeds sourced from Yeosu, and homemade condiments.

Add fresh ‘assorted vegetables’, which change seasonally, to accompany the lamb.

The “stir-fried ribs,” stir-fried with vegetables, and “fish cake soup” in a warm, rich broth are also popular side dishes.

Meals include “rice bap,” a dish made with brown rice cooked with sake and rice oil, and “Haegeobaban,” a traditional bibimbap dish that originated in Haeju, Hwanghae Island.

HITSUJIYA

At Hokkaido-style Chingizukan lamb restaurant Hitsujiya, you can enjoy an unlimited course of lamb.

They also offer pork belly hot pot and cheese hamburger steak.

If you’re looking to wash down your meal, the all-you-can-drink course includes draft beer, highballs, and gin and tonics.

If the all-you-can-eat course is too much for you, you can also order a la carte.

Popular dishes include the lamb ribs. They are aged using a traditional secret recipe and are free of offal. The shoulder is the most tender cut of lamb. The tenderloin has an excellent chewy texture. The lamb loin, the most popular cut of lamb in Japan, is not cut into separate pieces, giving it a savory flavor.
