A short guide to Korean barbecue names, portions and the questions to ask before placing your first grill order.
A translation that can change your order
Galmaegisal (갈매기살) is a pork cut, not a bird dish. Korea Tourism Organization calls the grilled preparation “Grilled Pork Skirt.” A literal translation involving seagulls is misleading and should not be used to decide what you are about to eat.
Keep the Korean spelling alongside the English explanation. It makes matching a guide to a restaurant menu easier, especially when romanized names vary.
Read the meat and preparation separately
| Name | What to understand |
|---|---|
| 갈매기살 — galmaegisal | Pork skirt meat |
| 삼겹살 — samgyeopsal | Pork belly |
| 돼지갈비 — dwaeji galbi | A pork galbi/rib preparation; check the actual menu description |
| 양념 — yangnyeom | Seasoned or marinated; ask about the sauce if it matters to you |
Do not infer the animal from “galbi” alone. Read the full name and ask staff when a translation leaves out information. Bone-in presentation, trimming and marinade can differ between dishes and restaurants.

Check the quantity before the grill is prepared
Point to the item and ask whether there is a minimum order. Compare the listed amount per serving and the number of servings you intend to buy. The smallest displayed price may not be the cost of the complete meal you have in mind.
Then ask whether rice, noodles or soup are separate additions. If your group wants to sample several cuts, confirm the first order before adding another platter.

Treat ingredients and cooking arrangements as questions
Ask whether staff will manage the grill or explain how your table should use it. Do not rely on another table’s routine. Keep requests about marinades, food allergies or dietary restrictions specific; the English name of a cut cannot confirm the suitability of its sauce or preparation.
A successful first barbecue meal starts with a clear order rather than a long list of dishes. Save the name of the cut you enjoyed so you can recognize it next time.
